Onion Dip


Combine ¼ cup mayonnaise, with 1 tablespoon distilled white vinegar


1 tablespoon soy sauce in a mixing bowl,


Add 1 ½ teaspoons of water,


Stir in 1-2 table spoons minced onions,


Cover and refrigerate until cold.


This recipe is easy to spice up, by adding black pepper, Fresh parsley and even bacon.


Creamy Onion and Potato Bake

Peel 1-2 large onions and separate into rings,


Using 1kg of baby potatoes slice into thin discs,


In a large deep oven proof dish place a layer of potato slices and then add a layer of the onion rings on top spreading them equally across the potatoes.


Add salt and pepper, create as many layers as possible,


Once done, pour 200ml of cream over the completed dish.


Place 100g of grated cheddar cheese on top and bake at 180°C for

Roast Garlic Cloves


Heat oven to 180ºdegrees.


Line a baking dish with foil.


Put in a handful of garlic cloves in the centre then drizzle olive oil on top and sprinkle with salt and pepper.


Fold up the foil packet and seal tightly.


Bake for about 45-60 minutes or until soft


Onion Rings


Peel 1 large onion and slice it into thin rings.


Separate the rings and place them in a large bowl,


sprinkle on 1 tbsp of salt and set them aside for 20-30 minutes, until they are soft and have released much of their liquid.


Pour 1.5 to 2 inches of oil into a pot and heat to 190C.


Place ½ a cup of all-purpose flour, 1 teaspoon of salt, in a bowl.


Take a handful of the onions rings, squeezing out the moisture with your hands, and add them to the flour. Toss to coat, shake off the excess flour,


carefully lower the onions into the hot oil,


Fry the onions in batches until they are crisp and golden.


Remove the onion rings and place them on a paper towel-lined plate to drain,


sprinkling a bit of salt on top of each batch as you remove them. 


Garlic Bread


Preheat oven to 220°C/200°C fan-forced.


Take 2x 35cm baguettes cut 2.5cm-thick slices into each one across (don’t cut all the way through).


Combine 150g butter, 4 garlic crushed garlic cloves, and 2 tbsp. fresh flat-leaf parsley leaves and 1 tbsp.


finely chopped fresh chives in a bowl. Season with salt and pepper.


Spread over cut sides of baguettes.


Wrap each baguette in foil,


bake for 15 minutes or until butter is melted and the baguettes crisp 


Fried Egg in Onion Rings


Take a medium onion and slice into thick slices, removing the inside layers,


Be careful not to break the outside layer.


Place the Onion rings, add seasoning, salt and pepper to taste, in a pot of water and bring to a boil,


Lower the heat and simmer until the onion is tender.


Remove the onion rings and place them in a frying pan and fry them lightly on each side.


Crack A egg inside each ring, Cooked until done to taste. Serve.


Roast Onions


Peel and trim tops and bottoms of onions.


Depending on size of onion,


make 4 to 8 crossways incisions into the onion, but not all the way through.


Place into a baking dish, drizzle with oil, and then add enough beef stock to cover the roots and base of onions.


Roast at 180C for 45 mins, basting occasionally.


It is wonderful served with lamb, or added to salad or pasta. (Just toss through with some Parmesan) 


Lemon Garlic Salmon

Melt to 2 tbsp of butter in a well sized skillet over medium-high heat.


Stir in 2 tbsp of minced garlic.


Season the fillet of Salmon on both sides with 1 tsp of lemon black pepper,


Place the fillets in a pan and cook until it flakes when tested with a fork.


Make certain to flip the fillets midway through cooking to brown on each side.


Sprinkle with lemon juice
